In practice, an organoleptic analysis is a tasting test to determine the quality of the product. An organoleptic analysis is always a subjective test that directly involves taste and smell, but it is also related to the senses of sight and touch.
These make it possible to know the total number of microorganisms present in the food. This number is not related to the number of pathogenic microorganisms and therefore cannot be used as an index of their presence but should only be considered as an indicator of the general hygienic characteristics of the food.
